Protein powder is it's own food group in my house. I supplement protein regularly simply as a matter of convenience. This is not to suggest that you should supplement but rather to explain how this recipe came about. I make protein powder based mini cakes at least a few days per week. My current mini cake obsession stems from a pack of jumbo marshmallows in the house. I'm not a fan of marshmallows straight from the package but if you melt a marshmallow, well, then it is game on! So imagine my delight when I added a marshmallow to my chocolate mini cake and crumbled a graham cracker square on top-- Heaven!!!
S'MORES Protein Cake
1 scoop chocolate whey powder
1/3 tsp aluminum free baking powder
1/3 c water
1 Kraft jumbo marshmallow
1 graham cracker square, crumbled
Microwave marshmallow for 20-30 seconds on high in a bowl with at least a 2 cup capacity. Stir the first three ingredients together in small bowl. Add whey mixture to bowl with the semi-melted marshmallow. Microwave for additional 30-45 seconds. Remove from microwave, sprinkle with crushed cracker and enjoy!
